“Super” Food for the Superbowl

We don’t really follow football. (Shhh…don’t tell my dad who raised me to be a loyal Chiefs fan.) I’m not even sure who’s playing in the Superbowl this year…the Ravens and….oh, I honestly don’t know.

I do, however, love the Superbowl.

I don’t remember the last time I actually watched the game, because for me it’s all about the food and the company. Fortunately, there are not many hard-core football fans in the group we usually gather with. As a matter of fact, one of the guys says the Superbowl is his third favorite “holiday” because of the food. I’d say we’re with the right crowd.

So I thought I’d share my go-to recipe for the Superbowl (or any other occasion that calls for something warm and hearty): Black Bean Dip. It has become a staple in my take-along recipe collection because it’s oh-so simple (only 4 ingredients!) and always a hit.

Plus, it uses good-for-you black beans and antioxident-rich tomato sauce so I feel better about it than that stuff you buy in the can. It tastes so much better, too!

beandipBlack Bean Dip

2 cans black beans (15 oz), drained
1 can tomato sauce (8 oz)
1 cup grated cheddar cheese
½ packet taco seasoning

Combine beans and tomato sauce in saucepan. Bring to a boil.
Remove from heat and mash beans. Stir in cheese and seasoning.
Serve warm with tortilla chips.

For my food allergy friends: It does contain dairy, so if you know a good substitute for the cheddar, would you please leave me a comment and let me know? Otherwise, it’s a great option for those with food allergies. (Be sure to check the ingredients of the taco seasoning and tortilla chips.)

If the Chiefs ever make it to the Superbowl (one can hope, right?), I’ll have to actually watch the game. Until then, I’ll be at the food table with my Black Bean Dip, and maybe one or two of these other yummies…check them out.   1. Mmm…we were just invited to a Superbowl party and I’ve been thinking of what to make. Your bean dip looks yummy (I love black beans!)! I actually love football, but haven’t followed it for years (I had to ask this past week who was even playing in the Superbowl…haha).
