Need a simple one-dish dinner for a busy weeknight or weary weekend? This Cheesy Ham and Potato Bake is the perfect solution. Combining two favorite, family recipes, I discovered a savory and hearty way to satisfy a hungry crew. Plus, it’s a great way to use up leftover ham or those few potatoes lingering in your pantry!
Cheesy Ham and Potato Bake
4 large baking potatoes (or several small ones)
2 cups cooked ham, cubed
¼ cup butter
1 tablespoon grated onion
1 teaspoon salt
½ teaspoon thyme
1/8 teaspoon pepper
2 tablespoons all-purpose flour (or cornstarch) for thickening
1 cup milk
1 cup shredded cheddar cheese
1 tablespoon chopped fresh parsley
Preheat oven to 425°F and spray a shallow, 2-quart baking dish
with non-stick cooking spray.
Thinly slice the potatoes. Layer potatoes and ham in baking dish.
In a small saucepan, heat butter, onion, salt, thyme and pepper until butter is melted.
Add flour, and whisk until flour is completely dissolved. Add milk slowly;
continue to whisk until it begins to thicken. Pour over ham and potatoes.
Cover and bake for 45 minutes or until potatoes are tender.
Sprinkle with cheese and parsley.
Bake uncovered another 15 minutes or until cheese is melted.
Tip: Assemble the recipe ahead of time for a quick, throw-in-the-oven dinner on a busy night. Or, pair it with a salad and dessert and bless a another family with a ready-made meal. Make a double batch and your dinner is done, too!
